This chickpea salad is amazingly quick to prepare and makes a great side dish to any curry
Ingredients
- 1 tin chickpeas
- handful of fresh chopped coriander
- 1 tbsp lemon juice
- 2 tsp olive oil
- 5 cherry tomatoes chopped in half
- 1 red onion thinly sliced
- pinch of black pepper
Directions
- Drain the tin of chickpeas and place in salad bowl
- Add all of the remaining ingredients
- Toss thoroughly using (clean!) hands.
